The commercial kitchen is where a lot of otherwise clean jobs go sideways in the final stretch. It's a small room, sometimes 800 square feet, that somehow needs three inspections, a dozen trades in and out, a piece of equipment on a boat from overseas, and a hood the size of a car that has to fly in before the ceiling closes. Miss the sequence and you're chasing a certificate of occupancy while the owner has already printed the menus and hired the line cooks.

If your six-week look-ahead is the first place you're thinking about a piece of gear, you're already late by two months.
So the six-week window doesn't manage procurement. It manages the consequences of procurement. What the look-ahead needs from the FSE contractor is a hard delivery date for every major unit and a confirmed submittal for the rough-in dimensions. The single most useful column you can add to your kitchen look-ahead is "cut sheet approved / rough-in released." Until a piece of equipment's rough-in is released, the plumber and electrician are guessing at stub-up locations, and a guessed stub-up is a jackhammered slab later. Rough-In: Get It Right Before You Pour

- Under-slab plumbing — grease waste, floor sinks, floor drains, and the indirect waste receptors for the dishmachine and steam equipment. Set to the equipment plan, not the architectural. Verify invert elevations against the grease interceptor before backfill.
- Electrical rough — this is where the horsepower lives. A commercial kitchen chews through three-phase circuits: hood fire suppression, walk-in condensers, combis, mixers, the works. Pull your feeders and set your panel schedule off the connected-load list, and leave the final whips loose until equipment is set.
- Gas rough — size the line for the full connected load plus the hood makeup air demand, and remember the gas solenoid tied to the fire suppression system.
- Wall blocking — hand sinks, shelving, wall-mount equipment, and the hood hangers. Nothing kills momentum like a tile setter waiting because the blocking for a wall-mounted rack never went in.
Build a buffer of a day or two between rough-in completion and the inspection you need to close walls or pour the pad. Inspectors don't come on your schedule, and a failed under-slab inspection with concrete on site the next morning is the kind of thing that gets people yelling. In a look-ahead, that buffer isn't padding — it's the difference between a plan and a wish.
The Exhaust Hood Drives the Ceiling
The hood is the one item that reorders the whole schedule, and it's the one most likely to get planned late because it lives at the intersection of four trades: the FSE contractor who furnishes it, the ironworker or carpenter who hangs it, the HVAC contractor who ties in the exhaust and makeup air, and the roofer who sets the exhaust fan curb and makeup air unit.
The hard rule: the hood has to be set and its ductwork tied in before the ceiling grid and drywall close in over it. That means the hood's delivery and set date is a pin in your six-week board that everything else pivots around. Get the structural support and hangers detailed early — a heavy Type I hood is not something you improvise blocking for. Coordinate the roof penetrations with the roofer so the curb is flashed and watertight before the equipment goes up top, because nobody wants to be cutting a roof in January after the interior's already finished.

The trap is that the flooring can't go in until the under-slab plumbing is set and inspected, and heavy equipment shouldn't be rolled in until the floor's cured — but the walk-in usually has to land before the floor around it is finished. Sequencing that dance is a look-ahead job.
Confirm every floor sink and drain location against the equipment plan one more time before the flooring subcontractor mobilizes. Pitch matters: a floor sink that doesn't drain is a health department flag and a re-do. This is a place where a quick field verification — someone standing on the slab with the approved layout in hand — saves a week of demolition.
Walk-Ins: Land Them Early or Regret It
Walk-in coolers and freezers are big, they're assembled on site, and they're frequently in the way of everything else once they're up. Land the panels and set the box early, while you still have a clear path to roll them in — before the doors are hung and the corridors are tight. The refrigeration lines and the condensing units (often on the roof) need to be coordinated with the same roof work as the hood, so batch that rooftop trip.
One detail that trips crews: the walk-in floor, the ramp or recessed slab, and the drain for the evaporator condensate all have to be sorted before the box goes up. Sort it after and you're pulling panels back apart.
Setting and Connecting: Where the Trades Converge
Equipment setting is a rigging and access problem as much as a plumbing one. Big items — the walk-in, the dishmachine, a large range suite — should be set before the space gets congested. Sequence the setting so you're not walking a 600-pound braising pan past finished millwork.
Then come the connections, and this is where a kitchen has a hundred small handoffs: the plumber makes the final water and waste, the electrician lands the whips, the gas fitter connects and the fire suppression contractor ties the appliances into the hood system. The order matters — you don't want final connections made before the equipment is anchored and leveled on its pad. A good weekly work plan breaks this out unit by unit rather than lumping it as "kitchen connections," because "the combi is connected but the dishmachine's waiting on the electrician" is the level of detail that actually moves a job.
The Three Inspections That Gate Your Opening
A commercial kitchen doesn't open on your say-so. It opens when the inspectors sign off, and there are usually three that gate it:
- Mechanical / fire suppression — the hood system test and the fire marshal's sign-off on the Ansul (or equivalent) tie-in. This one's non-negotiable and often needs the suppression contractor and fire marshal on site together.
- Plumbing / gas — final connections, backflow, grease interceptor, gas pressure test.
- Health department — the one owners fixate on, and rightly. Health looks at finishes, hand sinks, sneeze guards, hot water temperature, and whether everything drains. A missing hand sink or a floor sink that ponders instead of drains will stop this cold.
Put each of these on the six-week board as its own line with a readiness date in front of it, and treat the day before as a punch day, not the inspection day. Inspections rarely pass clean on the first pass in a kitchen; build in a re-inspection window rather than promising the owner a date that assumes perfection.
Testing, Balancing, and the Owner's Handoff
Before anyone turns on a burner for a health inspector, the equipment needs to be tested and the air balanced. The hood exhaust and makeup air have to be balanced together — pull too much and the doors won't open, pull too little and the kitchen fills with heat and the hood fails its capture test. Get your test-and-balance contractor scheduled early; they're a specialty trade and they book up.
Then there's the owner-side work that superintendents forget to schedule: equipment startup by the manufacturer's rep (some warranties require it), and staff familiarization on the gear. These aren't your trades, but they're on your critical path to a functioning kitchen, so they belong on the look-ahead. Running It Week to Week
